Amatriciana
A traditional Italian pasta dish with tomato sauce, cheese, pancetta(guanciale), and pepper.

- 400 g spaghetti
- 150 g Guanciale or Pancetta
- 50 g Pecorino cheese or Parmesan cheese
- 200 g tomato sauce
- to taste Black pepper
- to taste Salt
Boil the spaghetti in salted water until al dente
In a separate pan, cook the guanciale or pancetta until crispy
In the same pan of the pancetta cook the tomato sauce
Drain the pasta and combine with sauce.
At the end add pancetta and Black pepper.
